For decades, cashew farmers in Ghana primarily harvested the nuts for sale, while the juicy fruit was often left under the trees and quickly spoiled. Now, researchers, farmers, and regulators are exploring ways to transform this once-considered waste product into a valuable ingredient for the food and beverage industry. Ghana is one of the largest cashew producers in Africa, with an annual output of approximately 250,000 tons of raw cashew nuts. However, cashew trees produce a significantly larger quantity of fruit than the harvested nuts. The cashew fruit remains largely untapped in the commercial value chain due to a lack of buyers, processing facilities, and a suitable collection system. This opportunity has been highlighted through the MA-CASH project, a research initiative implemented by the Food Research Institute of the Ghana Council for Scientific and Industrial Research (CSIR). Francisca Aba Ansah, a post-harvest technology scientist and project leader, said the research team began by assessing the amount of cashew nuts wasted in producing regions as well as the potential for processing this fruit. Through research and collaboration with farming communities, the team has developed various products such as juice, juice blends, sausages, bread, and other food items made from cashew nuts. However, commercial production of cashew nuts is not straightforward. One of the obstacles is their high tannin content, which can affect flavor and consumer acceptance. Researchers must find ways to reduce tannins and limit the anti-nutritional effects of this fruit. Another major issue lies in storage time. Fresh cashews can spoil within just 24 hours of harvesting, making transportation from farms to processing facilities difficult. According to Ansah, the research team has developed a technology that extends the shelf life of the fruit to about six days before shipment. Upon arrival at the processing facility, the fruit can be kept refrigerated for use in the production process. If applied on a large scale, this technology could help establish a system for collecting and processing cashew nuts in agricultural communities, instead of letting a large portion of the yield go to waste right in the orchards. Some farmers have also started to find ways to exploit the value of cashew nuts on their own. Samuel Nortey Adumoah has experimented with processing cashew nuts into pito, a traditional Ghanaian drink, alongside wine and other beverages. Previously, he also considered cashew nuts simply a byproduct of the nut harvesting process. According to Adumoah, cashew-based beverages have commercial potential and require further investment to develop into a large-scale production industry. In the Bono region, Cashew Watch Ghana is supporting farmers in learning ways to add value to their cashew trees. Raphael Godlove Ahenu, the organization's national coordinator, said that over the past two years, farmers have been organized into groups and guided on how to process cashews into juice and other products. The Ghanaian government is considering cashew nut cultivation as it seeks to diversify its agricultural income sources and promote domestic agricultural processing. Andrews Osei Okrah, CEO of Ghana's Perennial Crop Development Authority, argues that cashew nuts are increasingly being recognized not just as a byproduct but also as a resource that can contribute to agricultural industrialization, job creation, and improved incomes in rural areas. For Ghanaian farmers, the value of a cashew crop has long been measured primarily by the number of nuts harvested. Utilizing the previously discarded fruit could open up a different avenue, but to transform this potential into a real economic sector, Ghana still needs to simultaneously address the challenges of capital, technology, logistics, and market access.
