This diamond shaped delight has won, or rather stolen many a heart with its exquisite taste and texture, and its rich cashew flavour. Made with cashews, milk, and sugar, this white slice of goodness is a treat not just for those with a sweet tooth, but for all Indians alike. The best thing about it is that it is rather easy to make, and in a few simple steps, you too can make your own batch of Kaju Katli. Heat the paste in a shallow pan on medium flame, then add some water and sugar, and stir continuously until the sugar is completely dissolved. Once cooled, knead the mixture and flatten the dough with a rolling pin. Grease a plate with ghee and transfer the cashew dough onto the plate.
